Ingredients
1.5 pounds ground turkey meat (93/7), (1386 cal, 0 carb, 75 fat, 183 protein)
1 cup diced onion (6 oz) (39 cal, 9 carb, 0 fat, 1 protein)
4 small celery stalks (6 oz), thinly sliced (22 cal, 5 carb, 0 fat, 1 protein)
2 tsp chicken broth granules (10 cal, 0 carb, 0 fat, 0 protein)
1 can diced tomatoes (175 cal, 35 carb, 0 fat, 7 protein)
2- 6 oz can tomato paste (250 cal, 60 carb, 0 fat, 10 protein)
2 1/2 Tablespoons chili powder (44 cal, 8 carb, 2 fat, 2 protein)
2 teaspoons garlic powder (4 cal, 1 carb, 0 fat, 0 protein)
1 teaspoon pepper
1 teaspoon red pepper flakes
2- 15 oz cans of kidney beans, rinsed and drained (440 cal, 114 carb, 0 fat, 42 protein)
Optional: top with shredded cheese, sour cream or nonfat plain Greek yogurt, tortilla chips, sliced green onion, salsa, avocados
Instructions
In a large saucepot over medium high heat add the meat, onions, celery, and 1/2 cup water. Cook for about 6-8 minutes while stirring, or until the meat is browned and no longer pink.
Remove from the heat and drain the excess liquid from the mixture. Add the remaining ingredients, except beans, and stir to combine. Add the beans and stir to combine.
Fill 24 large silicone ice cube cavities (4 trays that each have 6 cavities) (2" x 2" sized cavities, available on Amazon here) evenly with about 1/2 cup mixture in each cavity.
Cover the ice cube trays and place them in the freezer overnight or until frozen.
When the cubes are frozen, remove each cube from the tray and place into a gallon-sized freezer bag. Use a permanent marker to label the bag: "Chili/date/heat 3 chili cubes with 1/3 cup water."
When you are ready to eat the chili, heat 3 chili cubes with 1/3 cup of water on the stove in a small pot, stirring while it's heating. You can also warm it in a microwave safe dish in the microwave- Cook for 1 minute and stir. Repeat until it's heated throughout. Exact cooking times will depend on how frozen the chili is.
Cooking timesaving tip: It will take less time to warm the chili if the frozen cubes have been thawed in the fridge overnight.
If you want to heat more chili, or less, just keep the same proportions.
